More South Beach Diet I started back up again, for breakfast had a scramble with some vegetable juice, roastet vegetables and cheese. I ate some almonds for a snack and had a ham sandwich with sprouted grain, low-carb bread and some cauliflower.

The South Beach Diet One of the best things about this diet is the roasted vegetables. They're delicious, and you can include anything you want as long as it's not a root vegetable. I usually roast zucchini, red, yellow and orange bell peppers, a red onion, summer squash and asparagus. I coat them with three tablespoons of olive oil, throw in some kosher salt and coarse-ground pepper and then roast at 450 degrees for 30 minutes. They're great as a side or in an omelette or with scrambled eggs.

The South Beach Diet Day 25 For breakfast I had black tea and an omelette made with egg-whites, feta, tomato and spinach. Dinner was a scramble with turkey ham, roasted vegetables, low-fat cheese and a glass of tea. Snacks were almonds, just plain almonds.

The South Beach Diet Day 24 So far I have lost 15 pounds in three weeks on this diet. 15 POUNDS! For breakfast yesterday I had... Wait, I didn't eat breakfast as I had an early-morning appointment. For lunch I made a ham and egg scramble with roasted vegetables and cheese, that was tasty. For snacks I had some almonds and a couple of turkey and cheese roll-ups.
